Burghul, or bulgur, is a whole grain made from wheat grains that have been steamed, dried and crushed.
Available in various sizes; fine, medium, coarse and extra coarse, burghul is packed with vitamins, minerals and fibre.
Fibre-rich foods such as burghul may assist in reducing the risk of chronic disease, promote weight loss and improve digestion and gut health.
It’s easy to cook and can be added to many dishes, including salads, stews and bread. Burghul can also be used as a fibre-rich substitute to rice.

Cypriot Burghul Salad Recipe
Serves 4
Ingredients
100g cracked burghul wheat
Three bunches coriander, including half stems, shredded
One bunch parsley shredded
1/2 red onion, finely diced
1/2 lemon zested
One lemon juiced
1/2 cup extra virgin olive oil
Salt to taste
1/2 cucumber, peeled and diced (optional)
Method
Soak burghul wheat in boiling water for ten minutes
Pour into a strainer and set aside for 2 hour
Place coriander, tomatoes, cucumber if using, onion, lemon zest, lemon juice and olive oil to burgul in a bowl
Season well and serve immediately.
