Cypriot Burghul Salad Recipe

Serves 4

Ingredients

100g cracked burghul wheat

Three bunches coriander, including half stems, shredded

One bunch parsley shredded

1/2 red onion, finely diced

1/2 lemon zested

One lemon juiced

1/2 cup extra virgin olive oil

Salt to taste

1/2 cucumber, peeled and diced (optional)

Method

Soak burghul wheat in boiling water for ten minutes

Pour into a strainer and set aside for 2 hour

Place coriander, tomatoes, cucumber if using, onion, lemon zest, lemon juice and olive oil to burgul in a bowl

Season well and serve immediately.
