Taste the World: Fabrika's Global Panini Odyssey

Imagine yourself transported to the sun-drenched shores of Mykonos, the aroma of coffee and spices filling the air. Welcome to Fabrika, Sydney's newest Panini Bar, where every bite is a delicious passport to global flavours.

Just landed in the Inner West suburb of Marrickville, the precinct formally recognised as “Little Greece”, brand new ‘good vibes and panini bar’ ‘Fabrika’ is already blowing up the Sydney eats scene.

“The concept really started when we came back from Greece last year – all of the inspiration came from there,” the team from Fabrika tells Greek City Times.

“Each of our paninis are inspired by our travels around the world.”

The trendy eaterie takes it’s name from Fabrika Square in Mykonos and it’s logo is a clever take on the island’s renowned official mascot ‘Petros’ the Pelican.

With a recognised gap in the market for healthy eating alternatives, the panini bar concept is not new with “every Tom Dick and Harry”, as Fabrika puts it, opening an Italian-style panini bar, and all doing the same thing.

“Our panini bar is about flavours of the world,” Fabrika tells us, highlighting their point of difference.

Fuel your morning Greek-style

Start your day like a true Athenian with a frothy Freddo Cappuccino or a bold Freddo Espresso.  Then feast your eyes on the tasty menu that includes mouth-watering panino options, with fresh flavours reminiscent of their namesakes.

Find yourself whisked away to the Aegean with the aptly named ‘The Athenian’ featuring grilled eggplant feta with olive oil and oregano, capsicum, green peppers and olive paste; ‘The Mykonian Club; overflowing with free range grilled chicken, bacon, fresh tomato, baked potatoes, provolone cheese with house made mayo; and ‘Meat the Greek’ – basically a gyros in a sandwich – containing meat patty, fresh tomatoes, Spanish onions, baked potato topped with tzatziki.

But wait, there's more!

It’s not ‘all Greek’ to Fabrika. The team's wanderlust extends beyond Greece, with many more panini’s representative of many destinations around the world.

Craving Italian passion? ‘The Milano’ with San Daniele prosciutto, mortadella, sopressa, salami, pickled mushrooms, pesto mayo topped with olive oil, awaits. Yearning for a taste of Portugal? ‘The Ronaldo’s’ free range chicken, provolone cheese, fresh tomato, lettuce with peri peri mayo is your answer. Feeling adventurous? "The Beirut" - filled with tasty house made falafel, fresh tomatoes, cucumbers, houmous with tahini sauce - takes you on a Middle Eastern journey.

As if that’s not enough, let’s not forget to drool over  the numerous additional delicious options including, ‘The Aussie’ – a bacon, egg, provolone cheese with bbq and aioli taste sensation; ‘The Hangover’ - with bacon egg, provolone, cheese, hash brown with hollandaise; and ‘The Schnitty’ – complete with house made chicken schnitzel, mixed slaw, provolone cheese, fresh tomato, lettuce and peri peri mayo.

Each panino is a flavour fiesta, crafted with love and the freshest ingredients.

“So far our top sellers this week have been ‘The Ronaldo’ and ‘The Milano’, Fabrika tells us. “We can’t keep up – it’s amazing!”

With amazing locally sourced bread and focaccia from a local Italian supplier as well as house made delicacies such as the meatballs and falafel, as well as handcrafted pastries, Roman pizzas by the slice and amazing coffees, what’s not to love about this Flavours of the World panini bar.

Considering Marrickville was voted the tenth ‘coolest’ neighbourhood in the world out of 40 suburbs voted most liveable around the globe during an annual survey by Time Out Magazine in 2020, it would seem that the ultra trendy Fabrika is very fittingly located. Open for just a week now, the Fabrika is already quite the vibe.
