Giouvetsi with squid is a perfect meal to have while you are fasting.
Materials:
Five cans of squid of 170 g.
500g orzo pasta
One large onion, grated
Two jars of grated or chopped tomatoes
1 tsp. of tomato paste
1 cup of extra virgin olive oil
Salt and Pepper
Procedure
Step 1
Clean the squid from the backbone and guts. Cut them into large pieces.
Step 2
Heat the olive oil in a saucepan and sauté the squid with the grated onion. After 5 minutes, remove from heat and place in a clay pot.
Step 3
Dissolve the tomato paste in a glass of water and mix it with the grated tomatoes. Pour the sauce over the calamari into the clay pot. Add salt and pepper, add a glass of water, and bake the squid in the oven for 30 minutes.
Step 4
Then, pour the orzo into the pan and mix it well with the sauce. Continue baking for about 20 minutes until the orzo absorbs the liquid and is cooked. Serve the food hot.
