Fava beans with sweet paprika, onion and tomato

Paprika gives fava beans a unique aroma and enhances this beautiful dish, which is perfect for those who are fasting.

Materials:

450g split peas
1 tsp. paprika
One large onion cut into slices
One tomato, peeled and seeded, diced
1 cup extra virgin olive oil
juice of one lemon
Salt and pepper

Procedure

Step 1

Rinse the fava beans with plenty of cold water and boil them in five glasses of cold water. After it boils, add some salt, lower the heat and let it boil until it disintegrates. If necessary, add a little hot water.

Step 2

To prepare the sauce, pour a cup of olive oil into a large pan. Heat it and add the paprika. Mix and let the aromas be released.

Step 3

Put in the onion, cut into rings, and sauté it gently until it takes on a soft, pink colour. Add the tomato cubes, salt and pepper, stir the sauce twice and remove from the heat.

Step 4

Put the fava beans back in the pot and pour over the sauce. Mix with a wooden spoon, pour over the juice of a lemon and let it boil.

Step 5

Take it off the heat, put it on a plate and sprinkle it with plenty of pepper.
