Portokali Gliko (Πορτοκάλι γλυκό) is a toothsome orange sweet, kept in a jar.
Orangey, colourful, sweet and syrupy, this is the perfect way to preserve the essence of this delicious fruit all year round.
We recommend serving this 'spoon sweet' with a glass of cold water and vanilla ice-cream.
Ingredients
- 10 navel oranges
- 3 cups of water
- 3 cups of sugar
- Juice of 1/2 lemon
Steps to make Portokali Gliko
- Lightly rub surface of oranges over grater to remove some of the bitterness of the fruit.
- Slice off top and bottom of the orange.
- With a sharp knife, cut the skin into wedges from top to base. Do not cult pulp. Wedge will be 2cm at top and bottom and 2.5-3cm at widest part. Carefully peel away from fruit.
- Thread a needle with strong cotton or double thread. Roll each wedge into tight curl. String curls close together on thread. About 12 per thread. Tie into a necklace.
- Place necklaces in saucepan of boiling water and boil uncovered for 20 minutes.
- Rinse necklaces and cool in cold water.
- Refill saucepan with water bringing to boil and add necklaces. Boil for 20 minutes. Drain and rinse in cold water.
- Dissolve sugar in water over heat and add necklaces. Bring to boil.
- Lower heat and simmer uncovered for approximately 1 hour.
- Add lemon juice. Cook for another 30 mins, or until syrup is thick and set.
- Allow to cool before cutting thread and placing curls in jar and covering with syrup.
- Cover when completely cold.
- Serve the portokali gliko with a glass of water.
